Quinoa Mac and Cheese with Spinach

0.25 cups almond drink
0.5 tsps garlic powder
3 servings hemp hearts
1 pinch ground nutmeg
0.5 cups nutritional yeast flakes
1 cup quinoa
0.5 tsps seasalt
0.25 tsps smoked paprika
3 cups spinach leaves
2 cups purified water

Cooking instructions

  1. Add quinoa and water to a small saucepan. Bring to a boil then cover and reduce to simmer for 10 minutes. After 10 minutes, add spinach to the pot, recover and continue to cook for another 3 - 5 minutes.
  2. Remove quinoa from the stove and stir in spinach.
  3. Add remaining ingredients and stir to combine.
  4. Serve immediately or store in sealed glass containers in the fridge for 3 - 5 days.
