0.25 cups cotija cheese
0.25 cups fresh coriander
0.33 cups greek style yogurt
1 spring onion
1 pinches cumin powder
2 juice of lime
2 tbsps tomatillo salsa
2 cups shredded cooked chicken

Cooking instructions

  1. In a medium bowl combine the chicken, yogurt, salsa verde, onion, cilantro, and Cotija cheese.
  2. Mix thoroughly. Gently fold in the avocado.
  3. Add the lime juice, salt, and cumin and stir again gently. Taste and adjust seasonings if necessary.
  4. Serve wrapped in a tortilla, in a pita, with chips, or over salad greens. Or by itself.
